Ingredients
- 2 lb ground meat
- 1 yellow onion, chopped
- 2 garlic cloves, minced
- 1 TBSP tomato paste
- 1 ¼ cup beef broth
- 1 15oz can tomato sauce
- 1 15oz can diced tomatoes
- 1 tsp Italian seasoning
- 1 tsp paprika
- 1 ½ cups uncooked pasta (elbow, rotini, penne)
- 1 cup cheddar cheese, shredded
- Parsley, for garnish
Directions
- In large skillet, over med-high heat; sauté onion, cook 5 mins until soft
- Add garlic, cook 1 min
- Add ground meat, cook until no pink, about 6 mins
- Drain off fat
- Season with salt and pepper
- Add tomato paste, stir to coat
- Add broth, tomato sauce, diced tomatoes, Italian seasoning and paprika. Mix well
- Stir in noodles
- Bring to a simmer and cook until pasta is tender, about 15 mins. Stirring occasionally
- Stir in cheese
- Garnish with parsley
Notes:
My recipe tester didn’t have spinach available, so they skipped that. But added corn, they loved the taste and the change of ingredients didn’t impact the overall flavor of the dish. Thanks Liz for the feedback!
