Shrimp and Broccoli Stir-Fry

Shrimp and Broccoli

Ingredients

  • 1 lb medium shrimp, frozen, deveined, peeled, tail off
  • 4 green onions, sliced diagonally 1” lengths
  • 2 tsp fresh ginger, minced
  • 3 garlic cloves, minced
  • 1 bag frozen broccoli
  • 1/2 cup Soy Sauce
  • 2 TBSP rice vinegar
  • 1 TBSP honey
  • 2-3 handfuls of spinach (optional)
  • 1/2 tsp Crushed red pepper

Directions

  1. Heat a large skillet or wok over high med-high heat. Add cooking oil, shrimp and broccoli. cook about 7 mins
  2. Add sauce, cook another 5 mins
  3. In separate skillet over med-high heat, sauté onions, garlic and ginger for 1 min
  4. Add to shrimp skillet, continue to cook until shrimp is done
  5. Add spinach if desired, stir until wilted
  6. Serve with rice
  7. Garnish with sesame seeds

Notes:

Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
