Ingredients
- 4 chicken quarters, bone in, skin on
- Salt & Pepper
Marinade
- Chicken Broth – 1 box
- Red Miso Paste – 1/2 cup
- Rice Vinegar – 1/4 cup
- Mustard – 1/4 cup
- Honey – 1/4 cup
Directions
- In a slow cooker pot; add all marinade ingredients and stir well
- Place chicken quarters in marinade and let sit overnight
- Start slow cooker 6 1/2 hours before dinner time
- Cook chick quarters on low 6 hours
- Line a cookie sheet with foil
- Place chicken quarters on cookie sheet
- Spoon marinade over chicken quarters, just enough to be wet
- Place in oven on middle shelf and broil on high for 7-9 mins or until browned
- Remove from oven
- Sprinkle with salt & pepper
- Serve with rice
Notes:
This dish is very mild, if desired add a little Sriracha sauce or hot sauce of your choosing to give it more kick.
