Miso Chicken Quarters

Ingredients

  • 4 chicken quarters, bone in, skin on
  • Salt & Pepper

Marinade

  • Chicken Broth – 1 box
  • Red Miso Paste – 1/2 cup
  • Rice Vinegar – 1/4 cup
  • Mustard – 1/4 cup
  • Honey – 1/4 cup

Directions

  1. In a slow cooker pot; add all marinade ingredients and stir well
  2. Place chicken quarters in marinade and let sit overnight
  3. Start slow cooker 6 1/2 hours before dinner time
  4. Cook chick quarters on low 6 hours
  5. Line a cookie sheet with foil
  6. Place chicken quarters on cookie sheet
  7. Spoon marinade over chicken quarters, just enough to be wet
  8. Place in oven on middle shelf and broil on high for 7-9 mins or until browned
  9. Remove from oven
  10. Sprinkle with salt & pepper
  11. Serve with rice

Notes:

This dish is very mild, if desired add a little Sriracha sauce or hot sauce of your choosing to give it more kick.
