Kimchi Potatoes

Ingredients

  • 2 russet potatoes, peeled and cut into chunks
  • 1 tsp salt
  • 2 TBSP Kimchi paste
  • 2 tsp soy sauce
  • 1 tsp sesame oil
  • 1 pinch red pepper flakes
  • 2 green onions, sliced
  • 1 tsp lime juice

Directions

  1. Preheat oven to 400 F
  2. Place potatoes in a large glass bowl, add oil and salt. Mix completely
  3. Microwave for 4 mins
  4. Add Kimchi, soy sauce and red pepper flakes to potatoes and mix until potatoes are fully coated.
  5. Line cookie sheet with foil
  6. Spread potatoes out on cookie sheet
  7. Place in oven and bake 20 mins, flipping once or twice
  8. Garnish with scallions and drizzle of lime juice
