Ingredients
- 2 russet potatoes, peeled and cut into chunks
- 1 tsp salt
- 2 TBSP Kimchi paste
- 2 tsp soy sauce
- 1 tsp sesame oil
- 1 pinch red pepper flakes
- 2 green onions, sliced
- 1 tsp lime juice
Directions
- Preheat oven to 400 F
- Place potatoes in a large glass bowl, add oil and salt. Mix completely
- Microwave for 4 mins
- Add Kimchi, soy sauce and red pepper flakes to potatoes and mix until potatoes are fully coated.
- Line cookie sheet with foil
- Spread potatoes out on cookie sheet
- Place in oven and bake 20 mins, flipping once or twice
- Garnish with scallions and drizzle of lime juice
