Italian Stuffed Pork Roast

Ingredients

  • 1 pork tenderloin
  • salt and pepper
  • 3 garlic cloves, minced
  • 6 slices bacon
  • 1 large yellow onion, diced
  • 1/2 cup mushrooms
  • 1/2 cup bell peppers, chopped
  • 2 cups spinach leaves
  • 1/2 cup mozzarella cheese
  • 2 TBSP Italian Seasoning

Directions

  1. Preheat oven to 450 F.
  2. Cook bacon in skillet until crispy about 10 mins, set aside
  3. Drain most of the fat, in remaining fat sauté; onions, bell peppers and mushrooms until softened, about 7-10 mins.
  4. Add bacon to onion mix, stir well
  5. Trim the tenderloin of all of the silver skin on the outside.
  6. Then cut down the center of the tenderloin almost all of the way thru.
  7. Then make another slice from the center cut out on each side.
  8. Pound the tenderloin out to an even thickness.
  9. Salt and pepper the tenderloin.
  10. Sprinkle with the crushed garlic and Italian seasoning.
  11. Add a layer of onion mix
  12. Add layer of spinach
  13. Add a layer of cheese
  14. Roll up the tenderloin and tie it off with string or toothpicks.
  15. Brown the tenderloin quickly in olive oil over med/high heat
  16. Place the tenderloin in a baking dish.
  17. Bake for 25-30 minutes or until inside temp in 150 F.
  18. Let rest 10 minutes before cutting.
  19. Serve with roasted potatoes

Notes:

Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
