Ingredients
- 1 pork tenderloin
- salt and pepper
- 3 garlic cloves, minced
- 6 slices bacon
- 1 large yellow onion, diced
- 1/2 cup mushrooms
- 1/2 cup bell peppers, chopped
- 2 cups spinach leaves
- 1/2 cup mozzarella cheese
- 2 TBSP Italian Seasoning
Directions
- Preheat oven to 450 F.
- Cook bacon in skillet until crispy about 10 mins, set aside
- Drain most of the fat, in remaining fat sauté; onions, bell peppers and mushrooms until softened, about 7-10 mins.
- Add bacon to onion mix, stir well
- Trim the tenderloin of all of the silver skin on the outside.
- Then cut down the center of the tenderloin almost all of the way thru.
- Then make another slice from the center cut out on each side.
- Pound the tenderloin out to an even thickness.
- Salt and pepper the tenderloin.
- Sprinkle with the crushed garlic and Italian seasoning.
- Add a layer of onion mix
- Add layer of spinach
- Add a layer of cheese
- Roll up the tenderloin and tie it off with string or toothpicks.
- Brown the tenderloin quickly in olive oil over med/high heat
- Place the tenderloin in a baking dish.
- Bake for 25-30 minutes or until inside temp in 150 F.
- Let rest 10 minutes before cutting.
- Serve with roasted potatoes
Notes:
Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
