Firecracker Shrimp

Ingredients

  • 1 lb shrimp, peeled, deveined, tail off
  • 1 ½ tsp fresh ginger, minced
  • 3 garlic cloves, minced
  • 2-3 handfuls of spinach, optional
  • 4 green onions, sliced diagonally

Sauce

  • 1/3 cup brown sugar
  • 3 TBSP orange juice
  • ½ TBSP hot sauce
  • 2 TBSP rice vinegar
  • ¼ tsp crushed red pepper
  • ½ tsp kosher salt

Directions

  1. In small bowl, mix together sauce ingredients
  2. Let shrimp marinade in sauce 10-15 mins
  3. In large skillet over med-high heat; add shrimp and sauce, cook until shrimp starts to turn pink
  4. Add garlic and ginger, cook 1 min
  5. Add spinach, cook until wilted
  6. Serve over rice
  7. Garnish with green onions

Notes:

Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
