Ingredients
- 1 lb shrimp, peeled, deveined, tail off
- 1 ½ tsp fresh ginger, minced
- 3 garlic cloves, minced
- 2-3 handfuls of spinach, optional
- 4 green onions, sliced diagonally
Sauce
- 1/3 cup brown sugar
- 3 TBSP orange juice
- ½ TBSP hot sauce
- 2 TBSP rice vinegar
- ¼ tsp crushed red pepper
- ½ tsp kosher salt
Directions
- In small bowl, mix together sauce ingredients
- Let shrimp marinade in sauce 10-15 mins
- In large skillet over med-high heat; add shrimp and sauce, cook until shrimp starts to turn pink
- Add garlic and ginger, cook 1 min
- Add spinach, cook until wilted
- Serve over rice
- Garnish with green onions
Notes:
Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
