Chicken Tikka Masala

Ingredients

  • 2 chicken breasts, cubed
  • 1 onion, chopped
  • 5 garlic cloves, minced
  • 1 TBSP ginger root, minced
  • 1/2 tsp Turmeric
  • 2 tsp cumin
  • 2 tsp paprika
  • 2 tsp garam masala
  • 1 tsp cayenne pepper
  • 1 28oz can crushed tomatoes
  • 1/2 cup plain yogurt
  • 1/4 cup cilantro, diced

Directions

  1. In large skillet over med-high heat; brown chicken in hot oil until no pink visible, about 12-14 mins
  2. Set chicken aside
  3. Return skillet to stove and sauté onion and until soft, about 5 mins
  4. Add garlic, ginger and spices. Cook 1 min
  5. Add tomatoes and turn to low. Simmer 15 mins
  6. Add yogurt and chicken
  7. Simmer another 5 mins
  8. Salt & pepper to taste
  9. Serve over rice
  10. Garnish with cilantro

Notes:

Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
