Ingredients
- 2 chicken breasts, cubed
- 1 onion, chopped
- 5 garlic cloves, minced
- 1 TBSP ginger root, minced
- 1/2 tsp Turmeric
- 2 tsp cumin
- 2 tsp paprika
- 2 tsp garam masala
- 1 tsp cayenne pepper
- 1 28oz can crushed tomatoes
- 1/2 cup plain yogurt
- 1/4 cup cilantro, diced
Directions
- In large skillet over med-high heat; brown chicken in hot oil until no pink visible, about 12-14 mins
- Set chicken aside
- Return skillet to stove and sauté onion and until soft, about 5 mins
- Add garlic, ginger and spices. Cook 1 min
- Add tomatoes and turn to low. Simmer 15 mins
- Add yogurt and chicken
- Simmer another 5 mins
- Salt & pepper to taste
- Serve over rice
- Garnish with cilantro
Notes:
Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
