Chicken Cordon Bleu

Ingredients

  • 2 chicken breasts
  • 8-10 slices of swiss cheese
  • 4 slices of ham, thin, cooked
  • ½ cup bread crumbs
  • Salt & Pepper

Directions

  1. Preheat oven to 350 F
  2. Spray a large casserole dish with cooking oil
  3. Place chicken breast in ziplock baggie or under plastic wrap, one at a time
  4. Pound each breast to uniform thickness, between ¼” to ½”
  5. Cut breast in half, diagonally
  6. Sprinkle both sides of breasts with salt and pepper
  7. Put 1 to 1-1/2 cheese slices on each breast to cover chicken completely
  8. Top with ham slice
  9. Roll up and secure with a toothpick (or by tucking the flap underneath)
  10. Arrange in casserole dish (spaced out or tight together, depending on size)
  11. Sprinkle bread crumbs on top
  12. Place in oven and bake 35-40 mins
  13. Arrange cheese 1 to 2 slices on top to fully cover breast
  14. Place in oven and bake for 5 mins or until cheese melted
