Ingredients
- 1 bell pepper, chopped
- ¼ cup green onions, sliced
- 2 garlic cloves, minced
- 1 TBSP chili powder
- 1 TBSP cumin
- 2 lb ground meat
- 1 15oz can diced tomatoes
- 1 15 oz can black beans
- 1 TBSP hot sauce
- 1-2 cups mozzarella cheese, shredded
- 1-2 cups cheddar cheese, shredded
- 2 green onions, thinly sliced for garnish
Directions
- In large skillet, over med-high heat; sauté bell peppers and green onions, cook 5 mins
- Add garlic, cook 1 min
- Add chili powder and cumin, stir to combine
- Add ground meat, cook until no pink, about 5 mins
- Add diced tomatoes and black beans, stir
- Add hot sauce and cheeses, stir.
- Cover with lid and let melt
- Garnish with green onions
- Serve with tortilla chips
Notes:
Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
