Ingredients
- 2 bags of Frozen, Large Shrimp, peeled, deveined and tail on
- 1 cup shredded sweetened coconut
- 1 cup Panko crumbs
- 1 cup flour
- 1 cup honey
- 1 tsp garlic powder
- 1 tsp salt
Dipping Sauce
- 1/3 cup sweet chili sauce
- 2 tsp mayo
- 1/2 lime, squeezed
Directions
- Place frozen shrimp in cool water and soak until thawed
- In first bowl; mix panko crumbs and shredded coconut
- In second bowl; mix flour, salt and garlic
- In third bowl; add 1/4 cup honey
- Heat honey 30 seconds in microwave. Continue to add and heat honey as you use it up.
- Remove shrimp from water, pat dry with paper towel
- Place in Flour mix and coat
- Dip into honey until coated all sides
- Place in coconut mix and press onto shrimp
- Place on cookie sheet and spray with cooking oil
- Place oiled side down in fryer basket and spray second side with cooking oil
- Cook in Air Fryer at 375 F for 10 mins
- Combine sauce ingredients until completely mixed. Serve with shrimp.
Notes:
Roasted potatoes taste wonderful with the dipping sauce.
I like to use peeled, deveined, tail-off shrimp like these, so that you aren’t picking the shrimp out of the dish to bite the tail off.
I’ve found shrimp to be less expensive at Winco and Wal-mart.
If you can eat egg, you could use it in place of the honey. But I really liked the flavor the honey gave to the shrimp.
Pantry Item Notes:
- Mayo – I use Best Foods Vegan mayo. It is usually the less expensive vegan mayo option, is shelf-stable so I can keep a spare on hand and doesn’t separate.
- Gluten Free Panko Crumbs – I find these in the asian aisle. My regular grocery store has the standard ones in the baking aisle and asian section. But the gluten free ones are only in the asian section. Some grocery stores will have them in the Gluten Free section.
- Gluten Free Flour – I’ve used a lot of different Gluten Free Flours and will sometimes buy what is on the grocery store shelf for convenience. But I prefer Jules gluten Free Flour. It doesn’t leave a weird texture in your mouth. I also appreciate that she has a lot of recipes available.
- Lime Juice – I have to admit, most times I cheat and use lime juice out of the bottle. My limes usually go bad or get used in a drink and aren’t available for my recipes.
