Thai Chili Basil Chicken

Ingredients

  • 2 chicken breasts, cubed
  • 1 green onion, 1” lengths. Separate white and green parts
  • 1 cup fresh basil
  • 2 garlic cloves, minced
  • 1 tsp crushed red pepper
  • 1 TBSP dried Basil, for garnish

Sauce

  • 2 TBSP oyster sauce
  • 2 TBSP soy sauce
  • 3 tsp sugar
  • 2 TBSP water
  • 2 tsp lemon juice

Directions

  1. Mix sauce ingredients in medium bowl, set aside
  2. In large skillet over med-high heat; sauté garlic and red pepper, 10 secs
  3. Add white part of onion and chicken, cook 5 mins
  4. Add sauce, cook 4 mins
  5. Add green onion and basil. Cook until wilted and chicken fully cooked
  6. Serve over rice
  7. Garnish with Basil

Notes:

Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
