Thai Chicken Peanut Pasta Salad

Ingredients

  • 1 box pasta, rotini or penne
  • 2 chicken breasts, cubed
  • 1 tsp crushed red pepper
  • 1 cup grated carrot
  • 1 onion, chopped
  • 1 cup fresh basil
  • 4 green onions, ¼” lengths

Sauce

  • 5 TBSP Creamy peanut butter
  • ¼ cup water
  • 3 TBSP rice vinegar
  • 2 TBSP soy sauce
  • 2 TBSP maple syrup
  • 1 garlic clove, minced
  • ¼ tsp cayenne pepper

Directions

  1. Cook pasta per package instructions
  2. In medium bowl, mix sauce ingredients. Set aside
  3. In large skillet, over med-high heat; sauté onion until tender
  4. Add crushed red pepper, cook 1 min
  5. Add chicken and cook until 90% done
  6. Add carrot, cook 1 min
  7. Add sauce, cook 2 mins
  8. Add basil and pasta. Cook until basil is wilted

Notes:

Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
