Ingredients
- 1 box pasta, rotini or penne
- 2 chicken breasts, cubed
- 1 tsp crushed red pepper
- 1 cup grated carrot
- 1 onion, chopped
- 1 cup fresh basil
- 4 green onions, ¼†lengths
Sauce
- 5 TBSP Creamy peanut butter
- ¼ cup water
- 3 TBSP rice vinegar
- 2 TBSP soy sauce
- 2 TBSP maple syrup
- 1 garlic clove, minced
- ¼ tsp cayenne pepper
Directions
- Cook pasta per package instructions
- In medium bowl, mix sauce ingredients. Set aside
- In large skillet, over med-high heat; sauté onion until tender
- Add crushed red pepper, cook 1 min
- Add chicken and cook until 90% done
- Add carrot, cook 1 min
- Add sauce, cook 2 mins
- Add basil and pasta. Cook until basil is wilted
Notes:
Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
