Ingredients
- 2 chicken breasts, cubed
- 1 20oz can crushed pineapple, reserve juices
- 1/2 cup soy sauce
- 1 cup white vinegar
- 1 1/4 cups brown sugar
- 1 bag frozen veggie mix
- 1 bell pepper, chopped
- 4 green onions, sliced thin
- Sesame seeds
Directions
- In large skillet over med-high heat; combine pineapple juice, soy sauce, vinegar and brown sugar
- Whisk until all sugar is absorbed
- Add frozen veggie mix, cook 3 mins
- Add chicken, cook 5 mins
- Add pineapple chunks, simmer 15 mins
- Serve over rice
- Garnish with green onions and sesame seeds
Notes:
Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
