Sweet and Spicy Chicken Stir fry

Ingredients

  • 2 chicken breasts, cubed
  • 1 24 oz bag of frozen veggies
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 4 green onions, ¼” lengths

Sauce

  • 9 TBSP brown sugar
  • 4 ½ TBSP soy sauce
  • 3 TBSP fish sauce
  • 3 TBSP rice vinegar
  • 1-3 TBSP garlic chili paste
  • 3 tsp sesame oil
  • 2 TBSP Mirin

Directions

  1. In medium bowl, combine sauce ingredients, stir and set aside
  2. In large skillet, over med-high heat; sauté onion and bell pepper until softened
  3. Add chicken and frozen veggies; cook until chicken is 80% done
  4. Add sauce, stir to coat. Cook until chicken is done and veggies softened
  5. Serve over rice
  6. Garnish with green onions

Notes:

Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
