Ingredients
- 2 chicken breasts, cubed
- 1 24 oz bag of frozen veggies
- 1 bell pepper, chopped
- 1 onion, chopped
- 4 green onions, ¼†lengths
Sauce
- 9 TBSP brown sugar
- 4 ½ TBSP soy sauce
- 3 TBSP fish sauce
- 3 TBSP rice vinegar
- 1-3 TBSP garlic chili paste
- 3 tsp sesame oil
- 2 TBSP Mirin
Directions
- In medium bowl, combine sauce ingredients, stir and set aside
- In large skillet, over med-high heat; sauté onion and bell pepper until softened
- Add chicken and frozen veggies; cook until chicken is 80% done
- Add sauce, stir to coat. Cook until chicken is done and veggies softened
- Serve over rice
- Garnish with green onions
Notes:
Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
