Ingredients
- 2 chicken breasts, cubed
- Cornstarch
- 1 cup yogurt, plain or vanilla
- 1/4 cup tomato sauce
- 1/4 cup oyster sauce
- 2 TBSP Worcestershire sauce
- 1 tsp crushed red pepper
- 1 TBSP chipotle pepper
- 1 TBSP Cajun seasoning
- 2-3 cups spinach
- Kosher salt
Directions
- Mix yogurt, tomato sauce, oyster sauce, Worcestershire sauce, crushed red pepper, chipotle pepper and Cajun seasoning. Set aside.
- Coat chicken in cornstarch
- In a large skillet, over med-high heat; cook chicken until 90% done
- Add yogurt mix
- Cook until thickened
- Add spinach, cook until wilted
- Serve over rice
Notes:
Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
