Spanish Chicken Stew

Ingredients

  • 2 Chicken breasts, cubed
  • 3 small potatoes, cubed
  • 1 onion, chopped
  • 1 can diced tomatoes
  • 1 8 oz can tomato sauce
  • 1 4 oz can mushrooms
  • 1/2 cup beef broth
  • 1 TBSP hot sauce
  • 1 TBSP Worcestershire sauce
  • 1 TBSP soy sauce
  • 1 TBSP dried oregano
  • 1 tsp cajun seasoning

Directions

  • In large skillet over med-high heat; saute onions until softened. Set aside
  • Brown chicken, set aside
  • Add all other ingredients to crockpot and stir well
  • Add chicken and onion to crockpot
  • Cook on low 4 hours
  • Serve with bread

Notes:

Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
