Southwest Franks

Ingredients

  • 10 hot dogs, 1/4” slices
  • 1 (15 oz) can tomato sauce
  • 1 (15 oz) can sweet corn, drained
  • 1 tsp Chili powder
  • 1 tsp salt
  • 3 TBSP Creole Seasoning
  • 2 TBSP dry minced onion
  • 1 pkg rotini pasta
  • 3-4 cups spinach
  • Parmesan Cheese

Directions

  1. Cook pasta as directed on box
  2. In large skillet, on med-high heat; brown hot dogs.
  3. Stir in tomato sauce, corn, chili powder, creole seasoning, salt and minced onion.
  4. Cook 3-4 mins, then turn to low and continue to simmer for 10 mins
  5. Add spinach and noodles. Stir.
  6. Turn off heat, continue to stir until spinach is wilted
  7. Serve with Parmesan cheese as garnish

Notes:

Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
