Ingredients
- Rotini or Penne Pasta
- 2 chicken breasts, cubed
- 1 bell pepper, diced
- 2-3 cups spinach
- Parsley for garnish
Sauce
- 1/3 cup honey
- 1/4 cup apple cider vinegar
- 2 TBSP olive oil
- 2 TBSP lemon juice
- 2 TBSP brown sugar
- 2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp cayenne pepper
Directions
- Cook pasta as directed on package
- Mix sauce ingredients in bowl
- In large skillet, on med-high heat; sauté bell pepper until softened. Set aside
- Add chicken, cook until 90% done
- Add sauce, bring to a boil, then simmer for 3-4 mins
- Add pasta, spinach and bell pepper, toss to coat
- Remove from heat
- Garnish with green onion
Notes:
Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
