Smokey Chicken Pasta Salad

Ingredients

  • Rotini or Penne Pasta
  • 2 chicken breasts, cubed
  • 1 bell pepper, diced
  • 2-3 cups spinach
  • Parsley for garnish

Sauce

  • 1/3 cup honey
  • 1/4 cup apple cider vinegar
  • 2 TBSP olive oil
  • 2 TBSP lemon juice
  • 2 TBSP brown sugar
  • 2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp cayenne pepper

Directions

  1. Cook pasta as directed on package
  2. Mix sauce ingredients in bowl
  3. In large skillet, on med-high heat; sauté bell pepper until softened. Set aside
  4. Add chicken, cook until 90% done
  5. Add sauce, bring to a boil, then simmer for 3-4 mins
  6. Add pasta, spinach and bell pepper, toss to coat
  7. Remove from heat
  8. Garnish with green onion

Notes:

Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
