Pad Thai Spaghetti

Ingredients

  • Chicken Breasts, cubed very small
  • Spaghetti noodles
  • 1/2 large onion, diced
  • 6 white mushrooms, chopped
  • 3 garlic cloves, minced
  • Spinach (optional)
  • Basil, to garnish

Sauce

  • 1/4 cup oyster sauce
  • 5 TBSP brown sugar
  • 5 TBSP Soy Sauce
  • 3 TBSP Rice Vinegar
  • 1 TBSP Sriracha Sauce
  • 1/4 cup creamy peanut butter

Directions

  1. Cook noodles per package directions
  2. Mix sauce ingredients together in bowl, set aside
  3. In large skillet or wok, heat oil over med-high heat
  4. Add onions, mushrooms and garlic until browned
  5. Add chicken, cook until 90% done
  6. Add spinach, sauce and noodles
  7. Continue to cook until chicken is done
  8. Garnish with basil

Notes:

Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
