Mongolian Beef Ramen

Ingredients

  • 6 ramen noodle packets
  • 2 lbs beef, cut into pieces
  • 3 garlic cloves, minced
  • 1 tsp fresh ginger, minced
  • ½ cup soy sauce
  • ¼ cup brown sugar
  • 1 cup beef broth
  • 1 tsp red pepper flakes
  • 2 cups broccoli florets
  • 1 carrot, peeled and cut into matchsticks
  • 3 green onions, thinly sliced
  • Sesame seeds, for garnish

Directions

  1. Cook ramen noodles according to package, drain and set aside
  2. In large skillet, over med-high heat; sear beef about 2 mins per side, set aside
  3. Reduce heat to med-low; sauté garlic and ginger for 1 min
  4. Add soy sauce, brown sugar and broth
  5. Bring to a boil, reduce heat and simmer 3-5 mins until sauce thickens
  6. Add broccoli and carrots, cover skillet and cook 5 mins
  7. Return beef to skillet, stir
  8. Add ramen noodles and green onions, stir
  9. Cook until noodles are warmed
  10. Serve
  11. Garnish with sesame seeds

Notes:

Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
