Mexican Bowl

Ingredients

  • 1 lb Ground meat
  • 2 cups rice
  • 1 can sweet corn
  • 1 can black beans
  • 4 pickled jalapeños
  • 1/4 cup salsa
  • Nacho Cheese
  • Sweet onion, diced
  • 4 TBSP taco seasoning, divided

Nacho Cheese Sauce

  • 2 cups raw cashews
  • 3 TBSP lemon juice
  • 3 cups water, divided, plus more as needed to thin
  • 1/2 cup nutritional yeast
  • 1/2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp chili powder
  • 2 teaspoons salt, or to taste
  • 1-2 teaspoons Sriracha, optional

Directions

  1. Make rice per directions, add 2 TBSP taco seasoning when done
  2. Soak cashews in boiling water for 10 mins
  3. Cook ground meat, drain off fat.
  4. Add 2 TBSP taco seasoning to meat
  5. In a blender; add all nacho cheese sauce ingredients and blend on high until
  6. cashews are creamed
  7. Place cheese mix in saucepan over med-high heat, whisk constantly until it
  8. begins to bubble and thicken. Add more water, if needed to thin.
  9. In a saucepan, mix and warm beans and corn over med heat
  10. Sauté onions with jalapeños until softened
  11. Place rice in bottom of bowl
  12. Add corn and beans
  13. Layer with meat mix
  14. Top with peppers, onion, cheese sauce and salsa

Notes:

Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
