Ingredients
- 1 lb Ground meat
- 2 cups rice
- 1 can sweet corn
- 1 can black beans
- 4 pickled jalapeños
- 1/4 cup salsa
- Nacho Cheese
- Sweet onion, diced
- 4 TBSP taco seasoning, divided
Nacho Cheese Sauce
- 2 cups raw cashews
- 3 TBSP lemon juice
- 3 cups water, divided, plus more as needed to thin
- 1/2 cup nutritional yeast
- 1/2 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp chili powder
- 2 teaspoons salt, or to taste
- 1-2 teaspoons Sriracha, optional
Directions
- Make rice per directions, add 2 TBSP taco seasoning when done
- Soak cashews in boiling water for 10 mins
- Cook ground meat, drain off fat.
- Add 2 TBSP taco seasoning to meat
- In a blender; add all nacho cheese sauce ingredients and blend on high until
- cashews are creamed
- Place cheese mix in saucepan over med-high heat, whisk constantly until it
- begins to bubble and thicken. Add more water, if needed to thin.
- In a saucepan, mix and warm beans and corn over med heat
- Sauté onions with jalapeños until softened
- Place rice in bottom of bowl
- Add corn and beans
- Layer with meat mix
- Top with peppers, onion, cheese sauce and salsa
Notes:
Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
