Lemon Pepper Shrimp Scampi

Ingredients

  • 3 TBSP butter
  • 1 lb shrimp, peeled, deveined, tail-off
  • 2 tsp garlic, minced
  • 2 TBSP lemon juice
  • 1 TBSP Lemon pepper
  • 2 TBSP parsley, for garnish

Directions

  1. In a large skillet over med-high heat, melt butter.
  2. Add shrimp and cook until just turning pink
  3. Add remaining ingredients and finish cooking
  4. Serve over rice
  5. Garnish with parsley

Notes:

Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
