Ingredients
- 1 red onion, diced
- ½ tsp salt
- ¼ tsp cayenne pepper
- 1 lb ground meat
- 3 TBSP or 2 packets of taco seasoning
- 15 corn tortillas cut in half
- 2 cups salsa
- 1 pgk cheddar cheese, shredded
Corn and Bean Layer
- 1 15oz can corn, drained
- 1 15oz can black beans, drained
- 1 jalapeño pepper, seeded and diced
- 1 red bell pepper, seeded and diced
- ½ cup cilantro
- 1 tsp cumin
Directions
- Preheat oven to 400 F
- Grease an 11×9 casserole dish
- In large bowl; mix corn and bean layer ingredients and set aside
- In large skillet over med-high heat: sauté onion and ground turkey until almost fully cooked
- Add taco seasoning and ½ cup water, continue to cook until thickened.
- Remove from heat
- In 11×9 casserole dish; place corn tortillas in single layer on bottom
- Top with half of meat mixture
- Add half of corn and bean mix
- Add 1/3 of cheese
- Add another single layer of corn tortillas
- Add remaining meat mix
- Add remaining corn and bean mix
- Add 1/3 of cheese
- Add another single layer of corn tortillas
- Cover with salsa
- Sprinkle remaining cheese on top
- Place in oven and bake 20-30 mins until warmed through
- Let cool 10-15 mins before serving
