Layered Taco Bake

Ingredients

  • 1 red onion, diced
  • ½ tsp salt
  • ¼ tsp cayenne pepper
  • 1 lb ground meat
  • 3 TBSP or 2 packets of taco seasoning
  • 15 corn tortillas cut in half
  • 2 cups salsa
  • 1 pgk cheddar cheese, shredded

Corn and Bean Layer

  • 1 15oz can corn, drained
  • 1 15oz can black beans, drained
  • 1 jalapeño pepper, seeded and diced
  • 1 red bell pepper, seeded and diced
  • ½ cup cilantro
  • 1 tsp cumin

Directions

  1. Preheat oven to 400 F
  2. Grease an 11×9 casserole dish
  3. In large bowl; mix corn and bean layer ingredients and set aside
  4. In large skillet over med-high heat: sauté onion and ground turkey until almost fully cooked
  5. Add taco seasoning and ½ cup water, continue to cook until thickened.
  6. Remove from heat
  7. In 11×9 casserole dish; place corn tortillas in single layer on bottom
  8. Top with half of meat mixture
  9. Add half of corn and bean mix
  10. Add 1/3 of cheese
  11. Add another single layer of corn tortillas
  12. Add remaining meat mix
  13. Add remaining corn and bean mix
  14. Add 1/3 of cheese
  15. Add another single layer of corn tortillas
  16. Cover with salsa
  17. Sprinkle remaining cheese on top
  18. Place in oven and bake 20-30 mins until warmed through
  19. Let cool 10-15 mins before serving
