Korean Chicken

Ingredients

  • 2 chicken breasts, cubed
  • 2-3 handfuls of spinach, optional
  • 1 tsp cornstarch
  • 1 tsp cold water

Sauce

  • ¼ cup Gochujang sauce
  • ¼ cup soy sauce
  • 2 TBSP sesame oil
  • 2 TBSP Rice Vinegar
  • 2 TBSP brown sugar
  • 2 tsp ground ginger
  • 4 garlic cloves, minced
  • ½ cup yogurt
  • 2 TBSP lemon juice

Directions

  1. In medium bowl; combine all sauce ingredients, mix well
  2. Mix water and cornstarch
  3. In a large skillet over med-high heat, sauté chicken until 80% done
  4. Add sauce and cornstarch mix, stir in well
  5. Add spinach, if desired
  6. Cook until chicken is done and spinach is wilted. Sauce should have thickened up
  7. Serve over rice

Notes:

Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
