Ingredients
- 2 chicken breasts, cubed
- 2-3 handfuls of spinach, optional
- 1 tsp cornstarch
- 1 tsp cold water
Sauce
- ¼ cup Gochujang sauce
- ¼ cup soy sauce
- 2 TBSP sesame oil
- 2 TBSP Rice Vinegar
- 2 TBSP brown sugar
- 2 tsp ground ginger
- 4 garlic cloves, minced
- ½ cup yogurt
- 2 TBSP lemon juice
Directions
- In medium bowl; combine all sauce ingredients, mix well
- Mix water and cornstarch
- In a large skillet over med-high heat, sauté chicken until 80% done
- Add sauce and cornstarch mix, stir in well
- Add spinach, if desired
- Cook until chicken is done and spinach is wilted. Sauce should have thickened up
- Serve over rice
Notes:
Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
