Jambalaya I

Ingredients

  • 2 chicken breasts, cubed
  • 1 lb shrimp, uncooked,deveined, peeled, tail off
  • 2 bell peppers, diced
  • 1 onion, diced
  • 4 garlic cloves, minced
  • 14 oz can, crushed tomatoes
  • 3-4 cups chicken broth
  • 1 1/2 cups long grain white rice
  • 2 TBSP cajun seasoning
  • 1 tsp dried thyme
  • 1/4 tsp cayenne pepper
  • 1 bay leaf

Directions

  1. Heat 1 TBSP oil in large skillet, add chicken saute 5-7 mins until cooked, set aside
  2. Add 2 TBSP oil to skillet; add bell pepper, onion and garlic. Saute for 6 mins until
  3. onion is soft
  4. Add crushed tomatoes, rice, cajun seasoning, thyme, cayenne pepper and bay
  5. leaf. Stir well
  6. Cook until it reaches a simmer. Reduce heat to med/low
  7. Cover and simmer 25-30 mins, stirring every 5 mins
  8. Add shrimp and cook until pink
  9. Add chicken
  10. Remove bay leaf
  11. Add salt and pepper as needed

Notes:

Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
