Ingredients
- 2 chicken breasts, cubed
- 1 lb shrimp, uncooked,deveined, peeled, tail off
- 2 bell peppers, diced
- 1 onion, diced
- 4 garlic cloves, minced
- 14 oz can, crushed tomatoes
- 3-4 cups chicken broth
- 1 1/2 cups long grain white rice
- 2 TBSP cajun seasoning
- 1 tsp dried thyme
- 1/4 tsp cayenne pepper
- 1 bay leaf
Directions
- Heat 1 TBSP oil in large skillet, add chicken saute 5-7 mins until cooked, set aside
- Add 2 TBSP oil to skillet; add bell pepper, onion and garlic. Saute for 6 mins until
- onion is soft
- Add crushed tomatoes, rice, cajun seasoning, thyme, cayenne pepper and bay
- leaf. Stir well
- Cook until it reaches a simmer. Reduce heat to med/low
- Cover and simmer 25-30 mins, stirring every 5 mins
- Add shrimp and cook until pink
- Add chicken
- Remove bay leaf
- Add salt and pepper as needed
Notes:
Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
