Ingredients
- 2 chicken breasts, cubed
- 1 15oz can Green Beans
- 3/4 cup chicken broth
- 1/3 cup creamy peanut butter
- 2 tsp honey
- 1 1/2 TBSP soy sauce
- 1 1/2 tsp sriracha sauce
- 2 TBSP lemon juice
- 2-3 handfuls spinach, optional
- Salt and Pepper, to taste
- 3 green onions, 1/4†lengths
- 2 TBSP peanuts, chopped
Directions
- In large skillet over med-high heat; sauté chicken until 80% done
- Add: broth, peanut butter, honey, soy sauce, sriracha and lemon juice
- Mix well and simmer on low for 5-7 mins, until thickened
- Add Spinach, if desired, cook until begin to wilt
- Add green beans, cook 1-2 mins until warmed
- Salt and pepper to taste
- Serve with Rice
- Garnish with green onions and peanuts
Notes:
Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
