Indonesian Chicken

Ingredients

  • 2 chicken breasts, cubed
  • 1 15oz can Green Beans
  • 3/4 cup chicken broth
  • 1/3 cup creamy peanut butter
  • 2 tsp honey
  • 1 1/2 TBSP soy sauce
  • 1 1/2 tsp sriracha sauce
  • 2 TBSP lemon juice
  • 2-3 handfuls spinach, optional
  • Salt and Pepper, to taste
  • 3 green onions, 1/4” lengths
  • 2 TBSP peanuts, chopped

Directions

  1. In large skillet over med-high heat; sauté chicken until 80% done
  2. Add: broth, peanut butter, honey, soy sauce, sriracha and lemon juice
  3. Mix well and simmer on low for 5-7 mins, until thickened
  4. Add Spinach, if desired, cook until begin to wilt
  5. Add green beans, cook 1-2 mins until warmed
  6. Salt and pepper to taste
  7. Serve with Rice
  8. Garnish with green onions and peanuts

Notes:

Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
