Indian Butter Chicken II

Ingredients

  • ¼ cup butter
  • 1 large sweet onion, diced
  • 2 chicken breasts, cubed
  • 4 garlic cloves, minced
  • 2 TBSP Garam Masala
  • 1 TBSP Cumin
  • 1 TBSP Turmeric
  • 1 TBSP fresh ginger, minced
  • 2 tsp kosher salt
  • 1 TBSP lemon juice
  • ¼ tsp cayenne pepper
  • 1 cup yogurt, plain or vanilla
  • 1 8oz can tomato sauce
  • 2-3 handfuls spinach

Directions

  1. In a large skillet over med-high heat, melt butter.
  2. Add onion and sauté 5 mins
  3. Add chicken and cook until 90% done
  4. Add garlic, cook 1 min
  5. Add all remaining ingredients and simmer for 10 mins
  6. Serve over rice

Notes:

Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
