Indian Butter Chicken I

Ingredients

  • 2 Chicken breasts, cubed
  • 1 garlic clove, mashed
  • 1” ginger, peeled
  • 1 15oz can tomato sauce
  • ¾ cup coconut milk
  • 1 TBSP butter
  • 2-3 handfuls spinach, optional

Seasonings

  • 1 tsp turmeric
  • 2 tsp garam masala
  • 1 tsp cumin

Topping

  • 5 mint leaves, diced
  • ½ cup yogurt
  • 1 tsp lemon juice

Directions

  1. Season chicken with salt and pepper
  2. In a large skillet over med-high heat; melt butter
  3. Add chicken, brown all sides
  4. Add seasonings
  5. Add garlic, ginger and tomato sauce, simmer 10 mins
  6. Mix yogurt, lemon juice and mint leaves, set aside
  7. Add coconut milk; simmer 2-3 mins until warm throughout
  8. Add spinach, if desired. Stir and cook until wilted
  9. Remove from heat
  10. Serve over rice with Mint Yogurt topping

Notes:

Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
