Ingredients
- 2 chicken breasts, cubed
- 2-3 handfuls spinach, optional
Sauce
- 2 chipotle peppers
- 1 TBSP adobo sauce
- ½ cup honey
- 3 TBSP lime juice
- 3 TBSP soy sauce
- 1 tsp garlic powder
- 1 tsp flour
Directions
- Chop up chipotle peppers
- Blend all sauce ingredients in a food processor until smooth
- In a large skillet over med-high heat; sauté chicken until 80% done
- Add sauce, stir to coat
- Add spinach, if desired
- Cook until chicken is done and spinach is wilted
- Serve with rice
Notes:
Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
