General Tso’s Chicken Stir Fry

Ingredients

  • Chicken breast, cubed
  • 1/4 cup corn starch
  • 3 cups Spinach
  • Sesame seeds, for garnish

Sauce

  • 1/2 cup Hoisin Sauce
  • 2 TBSP Soy Sauce
  • 1/2 cup brown sugar
  • 2 garlic cloves, minced
  • 3 TBSP Rice wine Vinegar
  • 1 tsp sesame oil
  • 1/4 tsp ground ginger
  • 1/2 tsp crushed red pepper

Directions

  1. Mix sauce ingredients, set aside
  2. Coat chicken with cornstarch
  3. In saute pan over med-high heat, cook chicken until 90% done
  4. Add sauce, stir and cook 2 mins
  5. Add Spinach, stir and cook until completely wilted and chicken is done
  6. Serve over rice
  7. Garnish with Sesame Seeds

Notes:

Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
