Fiesta Chicken Fingers

Ingredients

  • 2 Chicken Breasts
  • 1/2 cup plain soy milk
  • 1 TBSP lemon juice
  • 1/4 tsp pepper
  • 1 cup flour
  • 3 cups corn chips, crushed fine
  • 1/4 cup taco seasoning

Directions

  1. Pound the chicken breasts down to 1/2” thickness
  2. Cut into 1” wide strips
  3. Mash corn chips to a small particles, will not coat correctly if they are large chunks.
  4. In small bowl, add Soy milk and lemon juice together to make a buttermilk mixture. Add pepper
  5. In another bowl, mix corn chips with taco seasoning.
  6. Put flour in a third bowl
  7. Dip chicken in flour, then buttermilk, then corn chip mix pressing it on to help adhere.
  8. Place chicken on a cookie sheet and spray with cooling oil
  9. Place into air fryer basket and spray other side with cooking oil
  10. Cook at 400 F for 7 mins
  11. Flip
  12. Cook another 7 mins

Notes:

In the corn chips are too large, they won’t stick to the chicken well. Use meat mallet to crush.
