Ingredients
- 2 Chicken Breasts
- 1/2 cup plain soy milk
- 1 TBSP lemon juice
- 1/4 tsp pepper
- 1 cup flour
- 3 cups corn chips, crushed fine
- 1/4 cup taco seasoning
Directions
- Pound the chicken breasts down to 1/2†thickness
- Cut into 1†wide strips
- Mash corn chips to a small particles, will not coat correctly if they are large chunks.
- In small bowl, add Soy milk and lemon juice together to make a buttermilk mixture. Add pepper
- In another bowl, mix corn chips with taco seasoning.
- Put flour in a third bowl
- Dip chicken in flour, then buttermilk, then corn chip mix pressing it on to help adhere.
- Place chicken on a cookie sheet and spray with cooling oil
- Place into air fryer basket and spray other side with cooking oil
- Cook at 400 F for 7 mins
- Flip
- Cook another 7 mins
Notes:
In the corn chips are too large, they won’t stick to the chicken well. Use meat mallet to crush.
