Drunken Noodles II

Ingredients

  • 2 chicken breasts, cubed
  • 3 garlic cloves, minced
  • ¼ tsp fresh ginger, minced
  • 2 shallots, sliced
  • 2 green onions, 1” pieces
  • 1 tsp crushed red pepper
  • 1 cup fresh basil
  • 2 tsp dry sherry

Marinade

  • 1 cup soy sauce
  • 1 TBSP corn starch
  • 3 TBSP brown sugar

Sauce

  • 3 tsp brown sugar
  • 1 ½ TBSP soy sauce
  • 2 TBSP fish sauce
  • 1 TBSP oyster sauce
  • ½ tsp white pepper

Directions

  1. Marinate chicken 20 mins in ziplock baggie
  2. Cook noodles per package instructions
  3. In small bowl, mix sauce ingredients
  4. In large skillet, over med-high heat; brown chicken
  5. Add garlic and ginger, cook 30 sec
  6. Add shallots, cook 1 min
  7. Add green onions, red pepper, basil, and sherry. Cook 20 sec
  8. Add sauce and rice noodles. Cook 3-4 mins until chicken is done

Notes:

Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
