Ingredients
- 2 chicken breasts, cubed
- 3 garlic cloves, minced
- ¼ tsp fresh ginger, minced
- 2 shallots, sliced
- 2 green onions, 1†pieces
- 1 tsp crushed red pepper
- 1 cup fresh basil
- 2 tsp dry sherry
Marinade
- 1 cup soy sauce
- 1 TBSP corn starch
- 3 TBSP brown sugar
Sauce
- 3 tsp brown sugar
- 1 ½ TBSP soy sauce
- 2 TBSP fish sauce
- 1 TBSP oyster sauce
- ½ tsp white pepper
Directions
- Marinate chicken 20 mins in ziplock baggie
- Cook noodles per package instructions
- In small bowl, mix sauce ingredients
- In large skillet, over med-high heat; brown chicken
- Add garlic and ginger, cook 30 sec
- Add shallots, cook 1 min
- Add green onions, red pepper, basil, and sherry. Cook 20 sec
- Add sauce and rice noodles. Cook 3-4 mins until chicken is done
Notes:
Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
