Cuban Chicken Black Bean Bowl

Ingredients

  • 2 Chicken Breasts, cubed
  • 3/4 tsp dried oregano
  • 1 bell pepper, chopped
  • 1 15oz can black beans, drained and rinsed
  • 4 garlic cloves, chopped
  • 3/4 tsp cumin
  • 2 TBSP taco seasoning
  • Cilantro, for garnish

Marinade

  • 1/4 cup Orange Juice
  • 3 TBSP white vinegar
  • 3 TBSP Olive Oil

Directions

  1. In large bowl, mix marinade ingredients
  2. Marinade chicken on counter for 10 mins
  3. In large skillet, over mid-high heat; sauté bell peppers until soft, about 10 mins
  4. Add: Beans, garlic, cumin, oregano, taco seasoning, salt and pepper, cook 2-3 mins
  5. Add chicken (do not add the marinade liquid, only enough liquid should move with the chicken to help everything mix together)
  6. Cook 7-10 mins until chicken is done
  7. Serve over rice
  8. Garnish with cilantro

Notes:

Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
