Ingredients
- 2 Chicken Breasts, cubed
- 3/4 tsp dried oregano
- 1 bell pepper, chopped
- 1 15oz can black beans, drained and rinsed
- 4 garlic cloves, chopped
- 3/4 tsp cumin
- 2 TBSP taco seasoning
- Cilantro, for garnish
Marinade
- 1/4 cup Orange Juice
- 3 TBSP white vinegar
- 3 TBSP Olive Oil
Directions
- In large bowl, mix marinade ingredients
- Marinade chicken on counter for 10 mins
- In large skillet, over mid-high heat; sauté bell peppers until soft, about 10 mins
- Add: Beans, garlic, cumin, oregano, taco seasoning, salt and pepper, cook 2-3 mins
- Add chicken (do not add the marinade liquid, only enough liquid should move with the chicken to help everything mix together)
- Cook 7-10 mins until chicken is done
- Serve over rice
- Garnish with cilantro
Notes:
Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
