Creamy Cajun Pasta

Ingredients

  • 2 chicken breasts, cubed
  • 1 Andouille sausage, 1/4” slices
  • 1 pgk pasta noodles, penne or rotini
  • 1 onion, chopped
  • 1 cup bell peppers, chopped
  • 3 garlic cloves, minced
  • 1-2 TBSP cajun seasoning
  • Salt & Pepper, to taste
  • 1 15oz can diced tomatoes
  • 1 cup chicken broth
  • 1 cup yogurt, plain
  • 2 cups cheddar cheese, shredded
  • 2-3 handfuls spinach, optional
  • 2-3 green onions, sliced thin, to garnish

Directions

  1. Cook pasta per package instructions, drain and set aside
  2. In a large skillet over med-high heat; brown sausages, set aside on plate to drain fat
  3. Add onion and bell peppers to skillet, cook 5 mins until softened
  4. Add garlic, cook 1 min
  5. Add sausages and chicken to skillet, cook 5 mins
  6. Add Cajun seasoning, salt and pepper. Stir to evenly distribute. Cook 4 mins
  7. Add broth and diced tomatoes, stir and cook 5 mins
  8. Add spinach and cook until wilted
  9. Add yogurt and cheddar cheese
  10. Check flavor, add more cajun seasoning if desired
  11. Garnish with green onions

Notes:

Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
