Ingredients
- 2 chicken breasts, cubed
- 1 Andouille sausage, 1/4†slices
- 1 pgk pasta noodles, penne or rotini
- 1 onion, chopped
- 1 cup bell peppers, chopped
- 3 garlic cloves, minced
- 1-2 TBSP cajun seasoning
- Salt & Pepper, to taste
- 1 15oz can diced tomatoes
- 1 cup chicken broth
- 1 cup yogurt, plain
- 2 cups cheddar cheese, shredded
- 2-3 handfuls spinach, optional
- 2-3 green onions, sliced thin, to garnish
Directions
- Cook pasta per package instructions, drain and set aside
- In a large skillet over med-high heat; brown sausages, set aside on plate to drain fat
- Add onion and bell peppers to skillet, cook 5 mins until softened
- Add garlic, cook 1 min
- Add sausages and chicken to skillet, cook 5 mins
- Add Cajun seasoning, salt and pepper. Stir to evenly distribute. Cook 4 mins
- Add broth and diced tomatoes, stir and cook 5 mins
- Add spinach and cook until wilted
- Add yogurt and cheddar cheese
- Check flavor, add more cajun seasoning if desired
- Garnish with green onions
Notes:
Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
