Chicken Teriyaki

Ingredients

  • 2 Chicken Breasts, cubed
  • Salt & Pepper
  • 2-3 handfuls Spinach
  • 3 green onions, sliced for garnish
  • Sesame seeds, for garnish

Sauce

  • 1/3 cup soy sauce
  • 1 1/2 TBSP Rice Wine Vinegar
  • 1 1/2 TBSP honey
  • 2 garlic cloves, minced
  • 2 tsp fresh ginger, minced
  • 1 1/2 tsp cornstarch

Directions

  1. Make sauce by combining together; soy sauce, rice vinegar, honey, garlic, ginger and cornstarch. Set aside
  2. In a large skillet over med-high heat; add chicken, season with salt and pepper and cook until 90% done.
  3. Pour sauce over chicken
  4. Add spinach
  5. Stir until coated thoroughly and cook until chicken is done and sauce has thickened
  6. Garnish with green onions and sesame seeds
  7. Serve with rice or kimchi potatoes

Notes:

Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
