Ingredients
- 2 Chicken Breasts, cubed
- Salt & Pepper
- 2-3 handfuls Spinach
- 3 green onions, sliced for garnish
- Sesame seeds, for garnish
Sauce
- 1/3 cup soy sauce
- 1 1/2 TBSP Rice Wine Vinegar
- 1 1/2 TBSP honey
- 2 garlic cloves, minced
- 2 tsp fresh ginger, minced
- 1 1/2 tsp cornstarch
Directions
- Make sauce by combining together; soy sauce, rice vinegar, honey, garlic, ginger and cornstarch. Set aside
- In a large skillet over med-high heat; add chicken, season with salt and pepper and cook until 90% done.
- Pour sauce over chicken
- Add spinach
- Stir until coated thoroughly and cook until chicken is done and sauce has thickened
- Garnish with green onions and sesame seeds
- Serve with rice or kimchi potatoes
Notes:
Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
