Chicken Pasta Carbonara

Ingredients

  • 1 box Pasta Noodles
  • 1/4 cup Just Egg
  • 1/4 cup Vegan Parmesan Cheese, shredded
  • Salt
  • 2 tsp Fresh cracked pepper
  • 1 package Bacon, cut into 1/2” pieces
  • Fresh spinach leaves (optional)
  • Fresh Parsley for Garnish

Directions

  1. Cook Pasta 1 minute shy of package instructions for Al Dente.
  2. Scoop 1-1/2 cups of starchy pasta water out of pot and set aside to cool. Do not
  3. drain off water.
  4. In a medium bowl whisk together: Just Egg, Cheese and pepper
  5. Cook bacon in large Saute pan over medium-high heat until browned and crispy, about 7 minutes
  6. When bacon is done, remove bacon with slotted spoon and drain on a paper towel lined plate.
  7. Reserve bacon fat in pan for later use
  8. Slowly add 1 cup of slightly cooled pasta water to egg mixture, whisking vigorously to prevent mixture from scrambling.
  9. Transfer pasta to saute pan with bacon grease and place over medium-high heat
  10. Add additional 1/2 cup of starchy pasta water to saute pan.
  11. Add fresh spinach to saute pan and mix together until slightly wilted
  12. Slowly drizzle egg mixture into pasta, toss until combined
  13. Add more starchy pasta water as needed to thin sauce until all noodles are coated evenly.
  14. Add crispy bacon and combine
  15. Salt and pepper to taste
  16. Garnish with Parsley

Notes:

Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
