Ingredients
- 1 box Pasta Noodles
- 1/4 cup Just Egg
- 1/4 cup Vegan Parmesan Cheese, shredded
- Salt
- 2 tsp Fresh cracked pepper
- 1 package Bacon, cut into 1/2†pieces
- Fresh spinach leaves (optional)
- Fresh Parsley for Garnish
Directions
- Cook Pasta 1 minute shy of package instructions for Al Dente.
- Scoop 1-1/2 cups of starchy pasta water out of pot and set aside to cool. Do not
- drain off water.
- In a medium bowl whisk together: Just Egg, Cheese and pepper
- Cook bacon in large Saute pan over medium-high heat until browned and crispy, about 7 minutes
- When bacon is done, remove bacon with slotted spoon and drain on a paper towel lined plate.
- Reserve bacon fat in pan for later use
- Slowly add 1 cup of slightly cooled pasta water to egg mixture, whisking vigorously to prevent mixture from scrambling.
- Transfer pasta to saute pan with bacon grease and place over medium-high heat
- Add additional 1/2 cup of starchy pasta water to saute pan.
- Add fresh spinach to saute pan and mix together until slightly wilted
- Slowly drizzle egg mixture into pasta, toss until combined
- Add more starchy pasta water as needed to thin sauce until all noodles are coated evenly.
- Add crispy bacon and combine
- Salt and pepper to taste
- Garnish with Parsley
Notes:
Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
