Ingredients
- 2 chicken breasts, cubed
- 1 box pasta, spaghetti or fettuccine
- 1 lemon
- Salt & pepper, to taste
- 6 TBSP butter
- ¾ cup Parmesan cheese, grated or shredded
- Basil or Parsley, for garnish
Directions
- Cook pasta per package instructions, reserve 3 cups of pasta water
- In large skillet, over med-low heat; finely grate lemon zest until all lemon skin is white
- Add butter 1 TBSP at a time, until melted and creamy
- Cut lemon in half and squeeze 2 TBSP of juice, set aside
- Add ¾ cup pasta water to skillet
- Turn skillet to med-high heat
- Add chicken and cook until 90% done
- Squeeze remaining lemon juice over chicken
- Add noodles, mix well
- Add cheese a little at a time, mixing well until sauce is creamy
- Add more pasta water as needed to keep sauce wet
- Add reserved 2 TBSP of lemon juice
- Salt and pepper to taste
- Garnish with basil or parsley
Notes:
Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
