Chicken Pasta al Limone

Ingredients

  • 2 chicken breasts, cubed
  • 1 box pasta, spaghetti or fettuccine
  • 1 lemon
  • Salt & pepper, to taste
  • 6 TBSP butter
  • ¾ cup Parmesan cheese, grated or shredded
  • Basil or Parsley, for garnish

Directions

  1. Cook pasta per package instructions, reserve 3 cups of pasta water
  2. In large skillet, over med-low heat; finely grate lemon zest until all lemon skin is white
  3. Add butter 1 TBSP at a time, until melted and creamy
  4. Cut lemon in half and squeeze 2 TBSP of juice, set aside
  5. Add ¾ cup pasta water to skillet
  6. Turn skillet to med-high heat
  7. Add chicken and cook until 90% done
  8. Squeeze remaining lemon juice over chicken
  9. Add noodles, mix well
  10. Add cheese a little at a time, mixing well until sauce is creamy
  11. Add more pasta water as needed to keep sauce wet
  12. Add reserved 2 TBSP of lemon juice
  13. Salt and pepper to taste
  14. Garnish with basil or parsley

Notes:

Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
