Chicken Paprikash

Ingredients

  • 2 Chicken Breasts, cubed
  • 2 TBSP Butter
  • 1 onion, chopped
  • Kosher salt and pepper
  • 4 garlic cloves, minced
  • 2 TBSP paprika
  • ¼ tsp cayenne pepper
  • 2 TBSP flour
  • 1 ½ cups chicken broth
  • 1 tsp sugar
  • ¼ cup yogurt, plain
  • 1 TBSP white wine vinegar

Directions

  1. In large skillet over med-high heat; melt butter.
  2. Add onion. Season with salt and pepper. Cook until tender, about 10 mins
  3. Add garlic, paprika and cayenne, cook 2 mins
  4. Mix flour and broth together. Pour into skillet. Cook 2 mins
  5. Add chicken and simmer until cooked
  6. Stir in yogurt and vinegar.
  7. Season with salt and pepper as needed
  8. Serve over rice

Notes:

Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
