Chicken Pad Thai I

Ingredients

  • Rice Noodles
  • Peanut Oil
  • 3 garlic cloves, minced
  • Chicken breast, cubed small
  • 1 red bell pepper
  • 3 green onions, sliced 1/8”

Sauce

  • 3 TBSP Fish Sauce
  • 2 TBSP soy sauce
  • 5 TBSP brown sugar
  • 3 TBSP Rice Vinegar
  • 1 TBSP Sriracha sauce
  • 2 TBSP Creamy peanut butter

Directions

  1. Cook noodles according to directions
  2. Mix all sauce ingredients together, set aside
  3. Heat peanut oil in saute pan over med-high heat.
  4. Add chicken, garlic and bell pepper, cook until 90% done
  5. Add rice noodles and sauce, stir to combine
  6. Cook 4-5 mins until chicken is done and noodles are coated with sauce
  7. Garnish with green onions

Notes:

Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
