Ingredients
- Rice Noodles
- Peanut Oil
- 3 garlic cloves, minced
- Chicken breast, cubed small
- 1 red bell pepper
- 3 green onions, sliced 1/8â€
Sauce
- 3 TBSP Fish Sauce
- 2 TBSP soy sauce
- 5 TBSP brown sugar
- 3 TBSP Rice Vinegar
- 1 TBSP Sriracha sauce
- 2 TBSP Creamy peanut butter
Directions
- Cook noodles according to directions
- Mix all sauce ingredients together, set aside
- Heat peanut oil in saute pan over med-high heat.
- Add chicken, garlic and bell pepper, cook until 90% done
- Add rice noodles and sauce, stir to combine
- Cook 4-5 mins until chicken is done and noodles are coated with sauce
- Garnish with green onions
Notes:
Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
