Chicken Enchilada Bake

Ingredients

  • 2 chicken breasts, cubed
  • 1 cup plain yogurt or Sour cream
  • 2 TBSP taco seasoning
  • 2 cups salsa
  • 1 box Pasta, rotini or penne
  • 2 cups cheddar cheese, shredded
  • ¼ cup cilantro, diced
  • 1 4oz can diced black olives
  • 4 cups spinach

Topping:

  • cup cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded

Directions

  1. Preheat oven to 400 F
  2. Cook pasta per box directions
  3. Cook chicken to 90% done
  4. In a large casserole dish, combine all ingredients except topping, including chicken and pasta. Stir together.
  5. Bake 15-20 mins
  6. Add topping and bake 5 mins until cheese is melted
  7. Garnish with cilantro
