Chicken Bacon Ranch Pasta Salad

Ingredients

  • 2 chicken breasts, cubed
  • 1 box pasta, rotini or penne
  • 4-6 slices of bacon, cut into 1/4” slices
  • 1 cup Ranch dressing
  • 4-5 green onions, sliced
  • 1/2 yellow or red onion, diced
  • 2-3 handfuls of spinach
  • 1 tsp cayenne pepper
  • Salt & Pepper

Ranch Dressing

  • 1 1/2 cup mayo
  • 1/2 cup plain non-dairy milk
  • 1 1/2 tsp apple cider vinegar
  • 3 garlic cloves, minced
  • 1/2 tsp dried parsley
  • 1 tsp dried dill
  • 1 tsp onion powder
  • 1/4 tsp paprika
  • 1/4 tsp pepper
  • salt to taste

Directions

  1. Make ranch by mixing all ingredients together, refrigerate for 4 hours to reach full flavor
  2. Cook pasta per package instructions, drain and set aside
  3. In large skillet over med-high heat; cook bacon until crispy
  4. Drain off all but 2-3 TBSP of fat
  5. Add onion and cook 2-3 mins until soft
  6. Add chicken, cook until about 80% done
  7. Add spinach, cook until wilted and chicken is done
  8. Add pasta and ranch dressing
  9. Add salt, pepper and cayenne pepper as desired

Notes:

Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
