Ingredients
- 2 chicken breasts, cubed
- 1 box pasta, rotini or penne
- 4-6 slices of bacon, cut into 1/4†slices
- 1 cup Ranch dressing
- 4-5 green onions, sliced
- 1/2 yellow or red onion, diced
- 2-3 handfuls of spinach
- 1 tsp cayenne pepper
- Salt & Pepper
Ranch Dressing
- 1 1/2 cup mayo
- 1/2 cup plain non-dairy milk
- 1 1/2 tsp apple cider vinegar
- 3 garlic cloves, minced
- 1/2 tsp dried parsley
- 1 tsp dried dill
- 1 tsp onion powder
- 1/4 tsp paprika
- 1/4 tsp pepper
- salt to taste
Directions
- Make ranch by mixing all ingredients together, refrigerate for 4 hours to reach full flavor
- Cook pasta per package instructions, drain and set aside
- In large skillet over med-high heat; cook bacon until crispy
- Drain off all but 2-3 TBSP of fat
- Add onion and cook 2-3 mins until soft
- Add chicken, cook until about 80% done
- Add spinach, cook until wilted and chicken is done
- Add pasta and ranch dressing
- Add salt, pepper and cayenne pepper as desired
Notes:
Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
