Chicken-Andouille Gumbo

Ingredients

  • Andouille Sausage, cut into 1/4” pieces
  • 1 chicken breast, cubed
  • 1/2 cup peanut oil
  • 3/4 cup flour
  • 1 yellow onion, chopped
  • 1 red bell pepper, chopped
  • 2 garlic cloves, minced
  • 2 tsp cajun seasoning
  • 1/8 tsp cayenne pepper
  • 48 oz chicken broth

Directions

  1. In large skillet over med-high heat; brown sausages, about 7 mins
  2. Remove to plate, set aside
  3. In skillet, heat peanut oil on medium heat
  4. Turn heat to low
  5. Gradually add flour, whisk constantly and cook for 18-20 mins until turns a milk chocolate color.
  6. Increase heat to med; add onion, bell pepper, garlic, cajun seasoning and cayenne pepper. Cook 3 mins
  7. Slowly stir in broth
  8. Increase heat to med-high; add chicken and sausage, bring to a boil
  9. Reduce to low heat, simmer 30-40 mins until chicken is done
