Ingredients
- Andouille Sausage, cut into 1/4†pieces
- 1 chicken breast, cubed
- 1/2 cup peanut oil
- 3/4 cup flour
- 1 yellow onion, chopped
- 1 red bell pepper, chopped
- 2 garlic cloves, minced
- 2 tsp cajun seasoning
- 1/8 tsp cayenne pepper
- 48 oz chicken broth
Directions
- In large skillet over med-high heat; brown sausages, about 7 mins
- Remove to plate, set aside
- In skillet, heat peanut oil on medium heat
- Turn heat to low
- Gradually add flour, whisk constantly and cook for 18-20 mins until turns a milk chocolate color.
- Increase heat to med; add onion, bell pepper, garlic, cajun seasoning and cayenne pepper. Cook 3 mins
- Slowly stir in broth
- Increase heat to med-high; add chicken and sausage, bring to a boil
- Reduce to low heat, simmer 30-40 mins until chicken is done
