Cheesy Pasta Bake

Ingredients

  • 1 pgk pasta noodles, rotini or penne
  • 1 lb ground meat
  • ½ lb turkey, chorizo, kielbasa or other sausage, cut into ½” pieces
  • 2 cups chopped onion
  • ¼ tsp crushed red pepper
  • 6 garlic cloves, minced
  • ½ cup red wine
  • 5 cups marinara sauce
  • ½ cup dried basil
  • 1 pgk cheddar cheese, shredded
  • 1 pgk mozzarella cheese, shredded

Directions

  1. Preheat oven to 350 F
  2. Spray a medium sized casserole dish
  3. Cook pasta as directed on package, reserve 1 cup of pasta water
  4. In large skillet over med-high heat; cook ground meat, set aside. Discard fat
  5. Brown sausage, set side
  6. Sauté onion until softened
  7. Add crushed red pepper and garlic, sauté until caramelized, about 10 mins
  8. Add wine, cook 4 mins or until liquid is mostly gone
  9. Add pasta, marinara, ground meat, and sausage. Mix well
  10. Add half of cheddar and mozzarella cheese, mix well
  11. Spread mix into casserole dish
  12. Sprinkle remaining cheese on top
  13. Bake for 15-20 until cheese is melted

Notes:

Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.

The flavor of the sausage will have a direct impact on the dish; use a spicy more flavorful sausage to pep the dish up.
