Cajun Stuffed Chicken

Ingredients

  • 2 chicken breasts
  • 1 med onion, diced
  • 1 bell pepper, diced
  • 2 cups shredded cheese
  • 2 TBSP cajun seasoning
  • Salt & Pepper
  • Green Onions, for garnish
  • Cilantro, for garnish

Directions

  1. Preheat oven to 350 F
  2. Spray 9×9 casserole dish with cooking spray
  3. Place one chicken breast in a large ziplock bag, seal closed
  4. Use a meat mallet to flatten chicken to uniform thickness, about 1”
  5. Cut chicken in half, diagonally
  6. Cut slit into chicken to form a pocket
  7. Coat chicken in cajun seasoning, set aside
  8. In a large skillet over med-high heat, sauté bell pepper and onion until softened, about 5 mins
  9. Remove from heat
  10. Mix in cheese
  11. Stuff onion mix into chicken pocket
  12. Place chicken into casserole dish
  13. Place any remaining onion mix in the casserole dish around the chicken
  14. Bake for 30-35 mins, or until chicken is done
  15. Garnish with green onions and cilantro
  16. Serve over rice

Notes:

Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
