Ingredients
- 2 chicken breasts
- 1 med onion, diced
- 1 bell pepper, diced
- 2 cups shredded cheese
- 2 TBSP cajun seasoning
- Salt & Pepper
- Green Onions, for garnish
- Cilantro, for garnish
Directions
- Preheat oven to 350 F
- Spray 9×9 casserole dish with cooking spray
- Place one chicken breast in a large ziplock bag, seal closed
- Use a meat mallet to flatten chicken to uniform thickness, about 1â€
- Cut chicken in half, diagonally
- Cut slit into chicken to form a pocket
- Coat chicken in cajun seasoning, set aside
- In a large skillet over med-high heat, sauté bell pepper and onion until softened, about 5 mins
- Remove from heat
- Mix in cheese
- Stuff onion mix into chicken pocket
- Place chicken into casserole dish
- Place any remaining onion mix in the casserole dish around the chicken
- Bake for 30-35 mins, or until chicken is done
- Garnish with green onions and cilantro
- Serve over rice
Notes:
Spinach can be added to most any skillet meal. Throw a couple handfuls in about 2-3 mins before the meal is done and stir until wilted.
